Saving farm land

All around you see farmlands up for sale. What one usually will see are warehouse buildings taking their places. Why do you need to see a giant square building? It is not usually an amazing looking building. Just a big rectangle. So why not build the warehouses under the land. The Farmer can lease the land to build underground. I am sure there is a way if the farmer can not afford the initial startup, it can be arranged as part of the deal. For example, for the farmer can be paid for time lost while construction is being done. Once done, lease cost will increase once the farmer can re-establish his farming crops.
